2 cups crushed chocolate sandwich cookies
1 cup finely chopped pecans and slivered almonds
1 tsp peppermint extract
1/2 gallon firm vanilla ice cream or any variety of ice cream

Combine first 3 ingredients and add extract. Mix well. Pour generous amounts of mixture onto waxed paper. Scoop 1/2 cup vanilla ice cream onto crumb mixture. Roll quickly and roll into a ball, covering ice cream complete with crumbs. Place ice cream ball in a foil cupcake liner. Repeat until 8 balls are formed. Freeze about 1 hour or until firm. If ice cream becomes soft, return to freezer 30 minutes before shaping.
