1 lb mushrooms, stems removed and chopped
3/4 lb imitation crabmeat, cut into chunks
6 tbsp butter
6 scallions, chopped
1/2 cup roasted red pepper
1 tbsp minced garlic
1/3 cup dry white wine and grated parmesan cheese
1/2 cup seasoned bread crumbs
2 tbsp chopped parsley
Thyme, salt and pepper, to taste
Melt butter in a large skillet and add garlic, mushroom stems, scallions and peppers. Saute until wilted. Add wine and cook until liquid had reduced. Add crabmeat and parmesan cheese and cook just long enough to heat through and cheese has melted. Mix well. Bind mixture with bread crumbs and enough water to make a firm but smooth mixture. Taste and add seasonings. Mount the filling into the caps and place in a shallow baking pan and bake 12-15 minutes or until hot.
