* Banana Bread - All Time Favorite

The cinnamon sugar mixture that is coated on the pan will make a great sugary outer crust. This is a super moist bread.

1/2 cup butter, softened
1/2 cup each granulated and brown (I use dark) sugars
2 eggs, beaten
1 tsp vanilla extract
3-4 bananas
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup chopped toasted pecans, Optional
1 cup chopped chocolate chunks, Optional
Cinnamon sugar

Preheat oven to 350. Prepare bread pan by greasing and coat the bread pan with some of the cinnamon sugar.

Cream together butter and sugars. Add eggs, vanilla extract and bananas. Mixing until the bananas are fulling mixed in and the batter is very creamy.

Sift dry ingredients and add to creamed mixture. Fold in nuts and chocolate chunks.

Pour half of the batter into the pan. Sprinkle with some more cinnamon sugar and top with remaining batter. Top with more cinnamon sugar. With a knife, swirl the batter. Bake about 1 hour or until center comes out clean when you test it with a toothpick.

After taking it out of the oven, take a knife around the inside of the pan. Allow the bread to completely cool before removing from pan.
