2 egg yolks
1/2 cup beer
2 tbsp butter
1 1/2 cups each grated Old English or Colby Longhorn and Velveeta cheeses
1 tsp worcestershire sauce
1/4 tsp dry mustard
1/2 tsp salt
Dash cayenne pepper
Beat egg yolks and beer together. Melt butter and cheese over a double boiler, stirring constantly until cheese and butter and incorporated. Add seasonings. Continue stirring as you add the egg mixture a little at a time. Keep the mixture piping hot as you stir but do not let it boil. Continue stirring until smooth. Adjust for additional cheese and seasonings. Serves 4
