1 cup semi-sweet chocolate chips
8 large marshmallows
1 tbsp water
3/4 cup sifted flour
1/2 cup sugar
3/4 tsp salt
1/2 tsp baking soda
1/2 cup softened butter
1/3 cup packed brown sugar
1 egg
2 tsp almond extract
1/2 tsp vanilla
1 1/2 cups quick cooking oats
1 cup chopped pecans and brickle bits
Preheat oven to 350. Grease cookie sheet. Melt chips in top of a double boiler over hot water. Stir in marshmallows and water. Stir until melted. Remove from heat; set aside.
Sift together dry ingredients. Slowly blend butter and next 5 ingredients into sifted ingredients. Mix well.
Stir oats, pecans, brickle bits and melted chocolate into batter. Blend thoroughly. Drop dough by tspfuls 2 inch apart onto cookie sheet. Bake 12-15 minutes. Remove from cookie sheet immediately; cool on rack.
