1/4 cup chili powder and brown sugar
1/2 cup paprika
1 teaspoon black pepper
1 tablespoon white and cayenne peppers, sea salt, garlic powder, ground cumin, dry mustard and oregano

Remove the membrane from both sides of the pork. Rinse the pork under clean water. Rub the pork all over with a mixture of olive oil and dry mustard, and salt. Approx 1 teaspoon dry mustard, 1 teaspoon sea salt to 1/4 cup olive oil .work it in to the pork very well. Cut a few slits in the pork and force some of the olive oil and mustard mix into them. Let it sit between 3 hrs and 24 hrs.

Preheat oven to 300 if baking. Rub the spice blend into the meat very well Bake about 2 hours or to your taste.

NOTES: If you would rather Smoke the meat: Pre Heat a smoker to about 200 degrees. Smoke about 4 1/2 hours, or to taste. * Optional: You can marinade the Pork for about 4 to 6 hours in Tequila first, then rub it down with the Olive oil mix for an extra special taste.
