2 1/2 - 3 lbs. rack of pork ribs
2 large yellow onions, julienned
2 cups red, green peppers, julienned
5-6 fresh whole garlic cloves, de-shelled and left whole
1/3 cup Canadian or Montreal seasoning
2 cups BBQ sauce
10 feet aluminum foil
Fold aluminum foil into triple fold for insulation, reserving one piece large enough to cover and tent over ribs. Layer bottom of folded foil with onions, peppers and garlic. Place rack of ribs on top of onions, peppers and garlic and season with Montreal or Canadian seasonings and BBQ sauce.
Fold bottom sides of foil pointing up so that you can place reserved piece of foil over all sides and tent or fold together so that it is tightly covered.
Place triple fold side down onto grill at high heat for the first 10 minutes. Turn heat down to low no higher than 300 degrees and cook for 3 1/2 to 4 hours on keeping temperature at a low heat.
