1 9 inch pastry unbaked pie crust
2 cups shredded mozzarella cheese, divided
5 plum tomatoes, sliced
1/2 cup mayonnaise
1/4 cup grated parmesan cheese
2 tbsp prepared pesto
1/2 tsp pepper
Preheat oven to 425. Unfold pie crust on a lightly greased baking sheet. Roll into a 12 inch circle and brush outer 1 inch crust with water. Fold edges up and crimp. Prick bottom with a fork. Bake for 8-10 minutes. Remove from oven
Sprinkle with 1 cup cheese; let cool 15 minutes. Arrange tomato slices over cheese. Stir together remaining 1 cup cheese, mayonnaise and remaining ingredients and spread over tomato slices. Reduce temperature to 375 and bake for 20 minutes or until cheese melts and tart is thoroughly heated.
