2 tbsp oil
2 large onions, chopped
1 green pepper, chopped
2 cloves garlic, minced
2 cups cubed ham
1 cup rice
1 bay leaf, crumbled
1/2 tsp thyme and salt
3-4 drops hot pepper sauce
1 (16 oz) can tomatoes, broken up
1/2-1 cup water or chicken broth

Heat oil in a large Dutch oven. Add chopped vegetables and garlic, cook until lightly browned, stirring occasionally. Add remaining ingredients. Cover and simmer until rice is tender and liquid is absorbed, 20-25 minutes. Taste and add more salt and pepper sauce if needed. Serves 4-6
