2 quarts cooked rice
1 /4 cup butter
¼ cup chopped onion
1 ½ teaspoon salt
1 /2 teaspoon pepper
1 cup sour cream
1 can cream of mushroom soup
1 cup grated sharp Cheddar or Velveeta cheese
Topping:
2 cups crushed Corn flakes
¼ cup melted butter
Instructions
Saute onion in butter and add remaining ingredients.
Pour into a baking dish.
Mix 2 cups crushed cornflake crumbs and 1 /4 cup melted butter.
Spread over casserole.
Bake at 350 for 45 minutes until hot.
Serves 15 people.
