1 (14.8 oz) can beef broth
1 (10/78 oz) can French onion soup
2 tbsp butter
1 (8 oz) pkg brown and wild rice mix
1 cup long grain rice, uncooked
1 cups chopped green, yellow and red bell pepper
1/2 cup sliced green onions
1/2 cup pine nuts, toasted, optional
1 tsp salt
In a saucepan, combine first 3 ingredients. Stir in rice mix and seasoning pack and long grain rice. Bring to a boil; reduce heat. Cover and simmer 20 minutes or until rice is tender and liquid is absorbed. Stir in remaining ingredients. Serves 6
