Cake:
1/2 cup unsalted butter
6 tbsp light brown sugar
6 tbsp sugar
1/2 tsp vanilla
1 egg
1 cup plus 2 tbsp flour
1/2 tsp baking soda
1/2 tsp salt

Filling
1/2 cup light brown sugar
1 egg
1/8 tsp salt
6 oz semi-sweet chocolate chips
1/2 cup chopped walnuts
1/2 cup coconut
1/2 tsp vanilla

Beat batter until thick. Spoon batter into paper lined tins evenly dividing between 12 cupcakes. Bake at 375 for about 10 minutes. Remove from oven and spoon filling into each cup equally dividing among cupcakes. Bake again for 15 minutes.
