1 cup butter, softened
2/3 cup sugar and packed brown sugar
1 egg
1 tsp vanilla extract
1 ¾ cup flour
½ tsp baking powder
¼ tsp salt
½ lb semi-sweet or bittersweet chocolate chunks
1 ½ cups old fashioned rolled oats
1 cup sweetened grated coconut
½ cup chopped pecans

Preheat oven to 375. Cream together first 3 ingredients until light and fluffy. Add eggs and vanilla; continue beating until creamy. Reduce speed and add dry ingredients. Beat until well mix. Stir in pecans, oats, and coconut by hand. Drop dough by tbspfuls 2” apart on an ungreased cookie sheet. Bake for 10-12 minutes or until lightly browned. Let stand 1 minute before remove to wire racks to cool completely.
