2 slices fresh bread, about 1 ½ - 2” thick, crusts removed
Strawberry preserves
Confectioners’ sugar
2 large eggs
2 tbsp half-and-half
Splash vanilla extract
Cut a pocket in the bread slices. Fill pocket with a heaping tbsp preserves and press to close pocket. Beat eggs, half-and-half, and vanilla. Soak bread in mixture for a minute. Add enough oil in a skillet so that when the bread is put into the skillet, it browns quickly. Ad soon as it is brown on one side, turn and brown on the other. Drain and sprinkle with confectioners' sugar.
