Rib Dry Rub
2 cups brown sugar
1 cup salt and pepper mix (ratio 2 to 1 salt to pepper)
1 cup granulated garlic
1 cup light or dark chili powder
3 tbsp onion powder
1 tbsp cumin
1 tsp cinnamon
1 tbsp cayenne pepper
1 tbsp thyme
Mix all ingredients together. Rub on ribs, put in fridge and let marinate for at least 8-12 hours, preferably overnight. When done, remove from fridge, and place in smoker for 5-7 hours at a smoking temperature of 225-250 degrees. Remove from smoker, cover with your favorite barbeque sauce, wrap the ribs in foil and place back in the smoker for another 5-7 hours.
