1 tbsp olive oil
1 tsp garlic, chopped
1/2 cup onion, minced
2/3 cup red bell pepper, roasted, chopped
1 cup baby bella or other mushroom, chopped
1/2 cup bacon, blanched and chopped
1 pkg (6.5 oz) or 2 pkgs. (4 oz) Garlic & Herbs, or Alouette Peppercorn Parmesan, or Alouette Sundried Tomato & Basil Spreadable Cheese.
2 tbsp fresh parsley (or 1 tbsp dried)
2 pkgs. (2.1 oz) frozen mini phyllo shell
In a non-stick pan over medium heat, heat oil and sauté garlic, onion, pepper, mushroom and bacon for 3-5 minutes. Reduce heat to low and add Alouette Garlic & Herbs Spreadable Cheese. Blend and simmer for a minute. Remove from heat and stir in parsley. Spoon a heaping tsp in each phyllo cup and serve warm.
