1 lb boneless, skinless chicken breasts cut into strips
1 medium onion, chopped
1 large carrot, thinly sliced
1 clove garlic, minced
2 tbsp butter
1 tbsp cornstarch
1 (14 1/2 oz) can chicken broth
2-3 tbsp lemon juice
1 tsp grated lemon peel
1/2 tsp salt
1 1/2 cups cooked instant rice
1 cup chopped frozen broccoli, thawed
1/4 cup minced parsley

In skillet, cook first 4 ingredients in butter until chicken is lightly browned, about 5 minutes. In a bowl, combine cornstarch and broth. Stir in next 4 ingredients and add to the skilled and bring to a boil. Reduce heat; add broccoli and parsley. Cover and simmer 5-10 minutes or until rice is tender. Serves 4
