Bacon Cheeseburgers with Kentucky Bourbon Sauce

This splurge of a burger is full of flavors1" -- gooey cheddar, crisp bacon, and a killer (but easy!) sauce that's sweet, smoky, and tangy.

2 large handfulls hickory or mesquite wood chips
2 teaspoons vegetable oil
2 slices bacon, cut into 1/2-inch wide strips
1 yellow onion, about 5 ounces, finely chopped (2/3 cup)
1 clove garlic, minced
1/4 cup bourbon
1 cup ketchup
1/4 cup water
3 tablespoons cider vinegar
3 tablespoons unsulfured molasses (not blackstrap)
2 tablespoons dark steak sauce
1 tablespoon spicy brown mustard
1 teaspoon liquid smoke
1/2 teaspoon hot pepper sauce
8 slices bacon
1 1/2 pounds ground chuck (80% lean)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 ounces smoked cheddar cheese, shredded or sliced
4 hamburger buns, split
4 leaves romaine lettuce
8 slices ripe tomato (1 large)

(1) Soak the wood chips in water for at least 30 minutes.

(2) In a heavy medium saucepan warm the oil over medium heat. Add the bacon strips and cook until browned and crisp, 3 to 5 minutes. Using a slotted spoon, transfer the bacon to paper towels to drain and cool, leaving the drippings in the pan.

(3) Add the onion to the saucepan, reduce heat to medium-low, and cook until soft and golden brown, 8 to 10 minutes, stirring occasionally. Stir in the garlic and cook until fragrant, about 1 minute.
