1/4 cup butter
2 cloves garlic, sliced
1 cup white wine
1/2 cup brandy
1 cup heavy cream
2 egg yolks
Salt and pepper, to taste

Saute chicken pieces in butter and garlic slices for 15 minutes, turning to brown thoroughly. Remove garlic and discard. Add wine and brandy, raise heat to warm alcohol and flame the liquor, shaking pan vigorously until brandy stops burning. Reduce heat to medium, cover pan and simmer for 15 minutes until chicken is tender, stirring occasionally. Remove chicken to heated platter.
