1 whole head cauliflower
6 tbsp butter
2 to 3 tbsp seasoned fine bread crumbs
1 cup grated Swiss or Cheddar cheese
1 tbsp chopped fresh parsley leaves

Preheat the oven to 350. Bring a large, deep pot (large enough to accommodate the cauliflower) of lightly salted water to a boil over medium-high heat. Carefully add the cauliflower, stem side up) and reduce the heat to medium. Simmer until the cauliflower is just tender, 10 to 12 minutes. Carefully transfer the cauliflower to a colander to drain. Cool slightly. Place it in a shallow baking pan and slice it into 4 or 6 portions (like you would cut a pie) without cutting all the way through. It will open slightly.

Combine the butter and the bread crumbs and mix to combine. Spread this mixture over the cauliflower. Then sprinkle with cheese. Bake for about 20 minutes, or until the cheese melts and is bubbly and lightly browned. Sprinkle with the parsley to serve. Serves 6
