Nonstick cooking spray
2 tsp olive oil
¼ onion, peeled, diced very fine
½ celery stalk, diced very fine
2 cloves garlic, minced
2 tbsp chopped fresh parsley
6 ounces crabmeat (fresh, frozen or canned, drained)
¼ cup breadcrumbs
1 lb flounder fillets
1/3 cup mayonnaise
2 tbsp lemon juice
2 tsp Mrs. Dash (or lemon pepper) seasoning
½ lemon, cut into 4 wedges
Spray large nonstick skillet with cooking spray. Add oil and heat over medium heat. Add onion, celery, and garlic and cook until onion is tender about 3-4 minutes. Add parsley, crabmeat, and breadcrumbs and mix well. Remove from heat and set aside.
Preheat broiler. Wash fish under cold running water; pat dry. Lay fillets out on broiler pan; place a large spoonful of stuffing in center of each. Roll up and secure with a toothpick, placing open end down.
In small mixing bowl, combine mayonnaise, lemon juice, and Mrs. Dash. Brush top of each fillet with mixture. Broil, 6 inches from heat, until fish is done and flakes easily to fork about 7 minutes. Serve immediately, garnished with lemon wedges. Serves 4
