1/2 cup chopped onion
3 cups water
1 1/4 cups long grain rice
3/4 cup frozen orange juice concentrate, thawed
3 tbsp soy sauce
1/4 tsp ground ginger
1/8 to 1/4 tsp pepper
3 cups frozen stir fry vegetables, any variety
1 cup chopped cooked chicken
Spray a saucepan with cooking spray and saute onion until tender but not brown. Stir in wanter and next 5 ingredients. Bring to a boil; reduce heat and cover. Simmer for 15 minutes and then sprinkle frozen vegetables on top of mixture; do not stir in. Cover and simmer about 5 minutes or until rice and vegetables are tender and liquid is absorbed. Stir in chicken and heat through.
