4 double thick pork chops
1 cups plus 2 tbsp flour
Salt and pepper
1/2 cup oil
1 large onion and green pepper, juilienned
2 stalks celery, sliced 1/2 inch thick
1/4 cup bourbon
2 cups water
1/2 cup brown stock
2 tbsp unsalted butter
Preheat oven to 375. Dredge pork chops in flour, coating well. Season with salt and pepper. Heat oil in a Dutch oven and add pork chops and sear on both sides. Drain half the oil from the pan and add vegetables. Cook 5-6 minutes.
Add bourbon to pan and cook 5-6 minutes more, allowing alcohol to burn off. Add water and stock then place skillet in oven. Cook for 13-15 minutes or until pork chops are cooked to desired doneness. Remove from oven and chops to serving platter. and whisk butter in sauce. Readjust seasoning and serve. Serve sauce over chops. Serves 4
