1 large onion and green bell pepper, chopped
2 tbsp vegetable oil
2 cups chopped cooked chicken
1 can EACH cream of chicken soup and cream of mushroom soup, undiluted
1 (10 oz) can diced tomato with green chilies
1 tsp chili powder
1/4 tsp EACH salt, garlic powder and ground black pepper
12 (6 inch) corn tortillas
2 cups shredded Cheddar cheese, divided
Preheat oven to 350. In a large skillet, heat oil over medium-high heat. Saute onion and bell pepper for until tender. Stir in chicken and next 7 ingredients. Remove from heat. Tear tortillas into 1 inch pieces. Layer 1/3 of tortilla pieces in bottom of a lightly greased 13x9 inch baking dish. Top with 1/3 of chicken mixture, then 2/3 cups of cheese. Repeat layers twice. Bake for 30 to 35 minutes. Serves 6 to 8
