18 cups popped corn
1 tbsp butter
2/3 cup light corn syrup
1 1/2 - 2 tsp vanilla
1 (3.4 oz) pkg instant butter pecan or butterscotch
1/2 tsp salt
Preheat oven to 300. Spray roasting pat with cooking spray and add popcorn and keep warm in oven.
Melt butter in a saucepan, stir in next 3 ingredients with a fork. Pour syrup over popcorn and toss with a wooden spoon.
Sprinkle with salt, toss, taste and sprinkle. Return to oven for 8 minutes, stir after 8 minutes. Continue baking until the popcorn becomes glossy, about another 8 minutes. Turn out on a large piece of foil to cool. Break into bits. Store in airtight container.
