Cake
1 box yellow cake mix, prepared according to package directions
1 (3.5 oz) can coconut
1 tsp vanilla extract
White Chocolate Cream Cheese Frosting, recipe follows
Lemon curd, recipe follows
Mix cake ingredients and pour into 3 (9 inch) round cake pans. Bake as directed and allow to cool. Refrigerate. Make Lemon curd and refrigerate until ready. Spread frosting between layers and on sides. Top with Lemon Curd.
White Chocolate Cream Cheese Frosting
6 oz white chocolate, chopped
1 (8 oz) pkg cream cheese, room temperature
4 tbsp butter, room temperature
5 1/2 to 6 cups confectioners sugar
1 tsp vanilla extract
Milk
Melt chocolate over low heat, stirring constantly. Let cool. Mix cream cheese and butter. Add chocolate and blend. Add sugar and vanilla slowly. Add the milk if it is too thick.
Lemon Curd
2 tbsp grated lemon zest
1 1/2 cups sugar
5 egg yolks
1/2 cup lemon juice
1/8 tsp salt
1/2 cup unsalted butter, melted
Combine zest and sugar in food processor and pulse until zest is as fine as sugar. Add yolks, lemon juice and salt; process for 10 seconds. With machine running, pour in melted butter. Cook mixture in a double boiler over low heat, stirring constantly until mixture is thickened. Cool and refrigerate until ready to use.
