1 medium cabbage, shredded
1 green or red bell pepper, chopped
1 red onion, cut into rings

Dressing
1 1/2 cups apple cider vinegar
3/4 cups oil
1 1/2 cups sugar
1 tbsp prepared mustard

Place slaw ingredients in a bowl. Mix dressing ingredients and bring to a boil. Pour over slaw and sprinkle with celery seed. Stir to combine. Leave at room temperature for several hours, stirring occasionally and then refrigerate about an hour before serving.
