1 cup tomato juice
1/4 cup red wine vinegar
1 small red onion, chopped
1 small clove garlic
1 tbsp Dijon mustard
1-2 tsp sugar
1/2 cup extra-virgin olive oil
Salt and pepper, to taste
In the food processor, combine ingredients and season with salt and pepper for taste. Process for 1 minute to mix well. Taste for additional sugar, salt and/or pepper. Process until combined, about 15 seconds. Serve immediately. Store leftovers in a covered jar and refrigerator for up to 2 weeks.
Note Use on Tomato Pasta salad and Tomato Cousous
