1 lb sea scallops
2 tbsp vegetable oil and lemon juice
1 large egg, lightly beaten
1/2 cup dry breadcrumbs
1/2 tsp salt
Dash pepper and paprika
1/4 cup butter, melted
Lemon wedges
Tartar sauce
Place scallops in a zip-top plastic bag. Combine oil and lemon juice; pour over scallops. Seal bag; marinate in refrigerator 30 minutes, turning occasionally. Remove scallops from marinade, discarding marinade. Combine egg and water; stir well. Combine breadcrumbs and next 3 ingredients. Dip each scallop in egg mixture, dredge in breadcrumb mixture. Place scallops in an ungreased 8” square pan. Drizzle butter over scallops. Bake, uncovered, at 450 for 15-20 minutes or until scallops are golden. Serves with lemon wedges and tartar sauce. Serves 4
