Sauce
1 lb sweet Italian sausage, casings removed
2 tsp minced garlic
2 (28 oz) cans crushed tomatoes
2 tsp sugar
1 tsp dried basil
1/2 tsp dried oregano
1 bay leaf
Dash salt and pepper
1 (12 oz) pkg extra-wide curly egg noodles, cooked al dente
4 large eggs, beaten
2 (10 oz) pkg frozen chopped spinach, thawed, drained and squeezed dry
4 green onions, sliced
Grated parmesan cheese
Dash ground nutmeg and pepper
1 lb coarsely shredded mozzarella cheese
1/4 cup grated parmesan cheese
In a pan, saute sausage, breaking up into pieces. Drain off excess fat. Stir in remaining sauce ingredients and bring to a boil. Reduce heat and simmer, uncovered, 1 hour or until sauce thickens, stirring occasionally. Discard bay leaf.
Cook noodles and drain. Stir in beaten eggs, spinach, onions and seasonings. Divide half the noodles between 2 well-oiled 9 inch square baking pans. Top with 1/4 of the sauce, 1/4 mozzarella and repeat layers. Sprinkle each casserole with cheese. Bake at 350 for 30-45 minutes or until cheese melts. Allow to rest 15 minutes before serving. Serves 8
