1 pkg gumbo rice mix
4 chicken breasts
4 cups water
3/4 cup flour
Creole seasoning, to taste
1/4 cup vegetable oil

Season chicken with Creole seasoning and dredge in flour. Brown in hot oil and set aside. Pour off all but 1-2 tbsp oil from skillet. Add gumbo mix with water; stir and bring to a boil.

To a greased casserole dish, pour gumbo mixture and place chicken pieces on top. Cover and bake at 400 for 45 minutes or until rice is tender and cooked. Serves 4
