1 pkg plain devils food cake mix
2 large eggs
1 3/4 cups thawed frozen whipped topping, or half of an 8-oz tub
1/2 cup confectioners sugar
Preheat the oven to 350. Blend the ingredients in a large bowl on low speed for 30 seconds. Scraping down the sides of the bowl. Increase the mixer speed to medium and beat 1 to 2 minutes more, or until batter is smooth and thick. Place the bowl in the refrigerator to chill 30 minutes.
Spoon out tspfuls of batter and form into balls. Roll in confectioners sugar. Place balls about 2 inches apart on ungreased baking sheets. Place in the oven and bake for 10 to 12 minutes, or until cookies puff up, are still soft in the middle but firm on the edges. Let cookies cool on the pan for 2 minutes, and then remove to a baking rack to complete cooling.
