1 lb ground beef
1 clove garlic, minced
1 tsp dried basil
1/2 tsp salt
1/8 tsp pepper
1 (12 oz) can diced tomatoes with juice
1 (4 oz) can diced green chilli peppers
1/2 cup ripe olives, sliced
2 cups grated Monterey jack cheese
8 (8 inch) flour tortillas
Garnish: chopped green onions, sour cream and green poblano hot sauce

Preheat oven to 375. Brown meat and drain. Add garlic and basil. Cool 2 minutes. Season with salt and pepper.

In a bowl, combine next 3 ingredients. Spay a casserole dish with cooking oil. Layer with 2 tortillas, 1/3 meat mixture, 1/3 tomato mixture and 1/3 cheese. Repeat with next 2 tortillas and continue layering, ending with cheese layer. Bake for 20 minutes or until cheese bubbles. Allow to rest 5 minutes. Cut into wedges and serve. Garnish as desired. Serves 4-6
