1 lb flounder fillets
1 bag frozen California mixed vegetables
Garlic powder, to taste
1 large onion, chopped
2-3 clove garlic, minced
1 cup shredded sharp mozzarella cheese
2-3 tsp olive oil
Parmesan cheese, to tasge
Break crumbs
1-2 tbsp butter
Saute onion and garlic in oil. Add vegetable mix. When soft, add parmesan cheese and bread crumbs. Drain and add shredded mozzarella cheese. Stuff and roll fish with vegetable mixture. Sprinkle with butter and garlic powder. Bake at 350 for 15-20 minutes or until fish flakes.
