1 to 2 large red onions, shaved crosswise into paper-thin circles (approximately 2 1/2 cups)
1/4 cup distilled white vinegar
1 tbsp kosher salt
1/4 tsp freshly ground black pepper
2 to 3 quarts vegetable oil for frying
1 cup milk
2 eggs
3 cups flour
4 1/2 tbsp Creole Seasoning

In a medium mixing bowl, combine onions, vinegar, salt, and pepper. Let sit for 30 minutes. Drain.

In a large cast-iron skillet, heat 1 inch oil to 350.

In a mixing bowl, whisk together milk and eggs. Place onions in milk mixture, then drain well.

In another mixing bowl, combine flour and Creole Seasoning. Toss onions in mixture, making sure they are coated well. Remove onions from bowl and shake off any excess flour.

Place half of coated onions in hot oil. Using a slotted spoon, gently turn 2 to 3 times. Fry for 3 to 4 minutes. Remove onions and place on a paper-towel-lined baking sheet to drain. Fry remaining onions and serve immediately.
