1 (16 oz) pkg ground pork sausage
1 small onion, chopped
3 tbsp flour
1/2 tsp ground cumin
2 cups milk
1 (16 oz) loaf Mexican Velveeta
1 (4 1/2 oz) can chopped green chilies, drained
16 oz macaroni, cooked
8 oz shredded sharp cheddar or Southwestern cheese blend
While pasta is cooking, cook sausage and onion; drain. Add next 3 ingredients, stirring constantly, until thickened. Add Mexican cheese and chilies, stirring until cheese melts. Add pasta. Spoon mixture into a lightly greased 13x9 inch baking pan. Bake at 350 for 25 minutes. Sprinkle with shredded cheese and serve with salsa. Serves 8
