1 cup marsala
1/4 cup olive oil
Zest from 1 lemon
1/4 cup lemon juice
2 clove garlic, crushed
1 tsp dry thyme or marjoram, oregano and fennel seed
1 tsp parsley
2 tbsp chopped scallions
2 dashes Worcestershire sauce
1/2 tsp pepper
Combine ingredients and marinade meat at least 4 hour.
