1/2 lb lean ground beef
1 pkg refrigerated pizza crust
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1/2 tsp onion powder and pepper
1 tsp salt
1 (7 oz) jar sliced roasted peppers, drained
1 cup shredded mozzarella cheese
1/2 cup fresh basil leaves
Cooking sprayed with nonstick cooking spray
1 tbsp grated parmesan cheese
Preheat oven to 400. Coat a rimmed baking sheet with cooking spray. Roll crust onto a cutting board. Spread spinach over crust. Spread ground beef over spinach and top with seasonings. Finish layering with pepper, cheese and basil. Roll up jelly-roll fashion and place on baking sheet. Lightly coast with cooking spray and sprinkle with parmesan cheese. Bake for 22 to 25 minutes, or until golden brown. Let sit for 4 minutes; then cut into slices and serve.
