2 shallots, minced or the white par of 2 green onions
1 clove garlic, minced
1/2 cup butter
1/4 cup dry sherry
1 lb fresh crab meat, cleaned
1/4 cup mayonnaise
1/2 cup whipping cream
1 (3 oz) pkg plain or herb-flavored cream cheese, cut in chunks
1/4 tsp nutmeg
Grated rind of 1 lemon, to taste
3-4 drops hot pepper sauce
1/4 tsp salt, or more to taste
Pepper, to taste
In a saucepan, saute shallots and garlic in butter for 5 minutes. Add sherry, raise heat to high and cook 2 minutes more. Add next 4 ingredients. Reduce heat and stir gently until well heated but not boiling. Add remaining ingredients. Serve in a hot chafing dis or warmer but keep the heat gentle so that the mixture does not simmer. Serve with warm, crusty French bread or crackers.
