2 lbs unpeeled zucchini, 5 inches long
3 slices prosciutto or boiled ham, finely diced
3 slices bacon, cooked and minced
3 tbsp parsley, chopped
1/2 onion, minced
1/2 cup Italian dressing
Grated parmesan cheese

Rinse zucchini in cold water. Drop into boiling water and simmer about 3 minutes. Drain and slice in half lengthwise. Place in a greased baking dish cut side up. Mix remaining ingredients and spoon mixture on top of zucchini. Bake at 350 for 20 minutes and then sprinkle with grated cheese. Continue to bake and additional 10-20 minutes or until tops are lightly browned. Serve.
