1 sheet thawed frozen puff pastry
1 (3 oz) pkg cream cheese, softened
1/3 cup half-and-half
3 eggs
6 oz frozen chopped spinach, thawed and squeezed dry
1 small bunch sliced scallions
1 medium red bell pepper, chopped
1/2 cup sliced white mushrooms
1/2 cup grated sharp cheddar and parmesan cheeses

Preheat oven to 425. Roll puff pastry into an 11 inch square and place in a 9 inch pie plate. Crimp edges and trim excess crust.

Beat cream cheese until fluffy. Add half-and-half a tbsp at a time and the eggs, one at a time, blending well after each addition. Stir in remaining ingredients gently and pour into prepared shell. Bake until filling is set and crust is golden brown, about 25 minutes. Cool slightly before serving.
