1 1/2 cups sugar
3 tbsp flour
1/4 tsp salt
3 large eggs, beaten
2 tbsp butter, melted
1 1/2 cups buttermilk
1 tsp vanilla extract
1/2 tsp lemon extract
1/2 tsp finely grated orange rind
1 cup unsweetened grated coconut
1 unbaked 9-inch pie shell
Preheat oven to 350. In a large mixing bowl, combine the sugar, flour, salt and mix until well blended. Add the eggs one at a time, beating well with an electric mixer after each addition, then beat in the melted butter, buttermilk, extracts, and orange rind till well blended and smooth.
Stir in the coconut, scrape the batter into the pie shell, and bake until a knife inserted into the center comes out clean, about 35 minutes. Transfer the pie to a wire rack to cool and serve at room temperature or chilled.
