2 (9 oz) pkg frozen artichoke hearts
4 tbsp butter
1/4 cup chopped onion
1 tbsp flour
1/2 cup half-and-half and sour cream
4 eggs, beaten
Salt and pepper, to taste
1/4 tsp grated nutmeg
2 tsp minced parsley
1 baked 9 inch pie shell
1/2 cup shredded cheddar and Swiss cheeses
1/2 cup grated parmesan cheese

Cook artichoke hearts as directed; drain, slice and set aside. Melt butter and saute onion until transluscent. Add flour; stirring until flour bubbles. Gradually add half-and-half, stirring until sauce begins to thicken. Combine sour cream, eggs and seasonings to taste. Add egg mixture to thickened onions, set aside.

Place a layer of artichoke hearts in bottom of pie shell and sprinkle with cheddar cheese. Add another layer of artichoke hearts and sprinkle with Swiss cheese. Pour egg mixture over layered artichokes and cheese; top with parmesan cheese. Bake at 350 for 45 minutes or until center is set. Cut into wedges.
