1 lb small red potatoes
3 tbsp olive oil and lemon juice
1 tbsp minced fresh oregano and thyme
1 1/2 lbs halibut fillets, diced into 2 inch cubes
4 skewers, soaked
Lemon wedges
Cook potatoes in boiling salted water just until tender; drain and cool. Combine next 4 ingredients in a large bowl. Add fish and potatoes. Cover and refrigerate at least 6 hours.
Prepare grill. Thread fish and potatoes on skewers. Grill about 10-12 minutes over direct heat. Serve with lemon wedges.
