1 cup butter, softened
1/2 cup sugar
2 tsp vanilla extract
1/3 cup light corn syrup
2 eggs, separated
2 1/2 cups flour
1/4 tsp salt
2 cups finely chopped nuts
1 (21 oz) can fruit pie filling, any flavor
Cream together first 3 ingredients. Add corn syrup and egg yolks; mix well. Stir in dry ingredients until well blended. Refrigerate dough 30 minutes. Put egg whites in a small bowl; beat with a fork. Roll chilled dough into 1 inch balls. Dip ball in egg white; roll in nuts. Place 2 inches apart on a greased cookie sheets. With your thumb, make an indentation in the center of each ball. Bake at 325 for 20 minutes or until set. Transfer to a wire rack; let cool completely. Fill each cookie with pie filling.
