1 lb ground chuck
1/4 cup crumbed colby cheese and finely diced red onion
2 tbsp steak sauce
2 tsp coarsley ground black pepper
1 tsp coarse kosher salt and granulated garlic
6 slices hickory-smoked bacon, browned and cut in half
3 (1/4 inch) sliced red large onion
3 large Kaiser rolls, split
9 slices cheddar cheese
1/2 cup Chipotle aioli (recipe follows)
sliced tomatoes
Romaine lettuce leaves
In a bowl, combine first 7 ingredients. Mix thoroughly. Equally divide the mixture and form into 3 patties, about 2 inches thick. Refrigerate, covered, until cooking.
Prepare grill for medium-high heat. Grease grill grate with vegetable oil and cook patties over the hot side of the grill for 3-4 minutes. Flip and cook another 3 minutes. Transfer burgers to the cooler side of the grill. Top with onion, bacon and cheese slices. Cover and cook another 1-2 minutes or until cheese has melted.
Transfer to a serving plate and cover with foil and allow meat to rest for 5-10 minutes.
Lightly butter and grill rolls. Spread with aioli and top with burgers. Serve with lettuce and tomatoes.
Chipotle Aioli
1/2 cup mayonnaide and sour cream
1 tsp granulated garlic
1 1/2 tsp dried Chipotle powder
1 tsp lime juice and chopped cilantro
Kosher salt and cracked pepper
Combine ingredients in a bowl. Season to taste with salt and pepper. Cover and refrigerate at least 1 hours until serving.
