4 cups beef broth
2 bay leaves
1 tsp dried oregano
1/2 tsp salt, white pepper and black pepper
2 tbsp unsalted butter, soy sauce, white-wine vinegar and favorite bbq beef rub
1/4 tsp cayenne pepper
1/4 cup minced garlic, chopped onions, green bell pepper and celery
Finely grated zest of 2 lemons and their juice
1 tbsp olive oil and sesame oil
1/2 tsp dry mustard
1 lb finely chopped bacon

Bring broth, bay leaves and oregano to a boil. Reduce heat to a simmer. Meanwhile, melt butter in a skillet. Add chopped vegetables, garlic and seasonings. Cook until browned, about 5-7 minutes, then add to the broth along with the lemon zest, juice, soy sauce, vinegar and oils. Stir to combine. Cook bacon in a skillet until soft. Add the bacon and any rendered fat to the broth mixture. Continue simmering until broth has reduced by 1/4th, about 45 minutes to 1 hour. Adjust seasonings and baste the desired meat.
