1 tsp celery seed
2 cups sugar
1 cup vinegar
6 medium cucumbers, peeled and thinly sliced
1 large onion, thinly sliced
3 tbsp chopped parsley
1 green pepper, diced
1 carrot, finely chopped
In a large bowl, mix together first 4 ingredients until sugar dissolves. Add remaining ingredients and refrigerate 2-3 day to allow the vegetable to marinate in the dressing. Serve.
