2 lbs ground chuck
1/4 cup diced onion
6 stalks celery, thinly sliced
1/2 tsp garlic powder and pepper
1/4 tsp Salt and pepper, to taste
1 (14.5 oz) can whole tomatoes, undrained and chopped
3 (8 oz) cans tomato sauce
2 cups small-curd cottage cheese
2 1/2 cups shredded sharp cheddar cheese, divided
1/2 cup grated parmesan cheese

4 1/2 (10 inch) flour tortillas or a basic crepe recipe prepared

Cook first 3 ingredients in a Dutch oven until beef is browned, stirring until it crumbles; drain. Stir in seasonings; cover, reduce heat, and simmer 1 hour, stirring often. Uncover and cook 30 minutes, stirring often.

Combine cottage cheese, 2 cups cheddar cheese and parmesan cheese; set aside.

Spoon half the meat sauce into a lightly greased 13x9 inch baking pan. Layer with either 1 1/2 tortillas or 6 crepes, and spread with half the cheese mixture. Repeat with tortillas or crepes on cheese mixture, layering with remaining meat mixture, and spread with half of cheese mixture. Top with tortillas or crepes and remaining meat mixture, tortillas or crepes and cheese mixture. Bake at 350 for 25 minutes. Sprinkle with remaining 1/2 cup cheddar cheese. Bake for 5 more minutes or until cheese melts. Let stand 5 minutes before serving. Serves 8
