4 oz chicken breasts, diced
1 oz red onion, red and green bell peppers, julienned
2 tbsp roasted corn
1 tsp garlic, chopped
1 pinch cayenne pepper
2 pinches cumin
1 oz lime juice and tequila
3 oz heavy cream
Salt and pepper, to taste
Parmesan cheese
1 tsp chopped parsley and diced roasted red pepper
1 lb ziti, cooked al dente

Saute garlic, peppers and corn. Add spices; deglaze with lime juice and tequila. Add remaining ingredients and simmer until sauce is thickened. Adjust seasonings, toss with ziti and garnish with roasted red peppers and parsley.
